- long-grain white rice3/4 cup
- whole-wheat tortilla4
- fresh spinachroughly chopped2 cup
- black olivessliced1 oz
- lemonjuiced1
- canola oil4 tsp
- dried rosemary1/2 tsp
- kosher salt1/3 tsp
- black pepper1/8 tsp
Instructions
- 1Thinly slice the chicken breast, roughly chop the spinach, slice the black olives, and juice the lemon.
- 2Do not rinse the chicken. Pat it dry, season both sides with the kosher salt, black pepper, and dried rosemary, and set it aside. Wash the board, knife, and your hands with soap and water before touching anything else.
- 3Cook the long-grain white rice according to the package directions, salting the cooking water well, until tender and fluffy.
- 4Heat the canola oil in a skillet over medium heat. Add the chicken in a single layer and cook for 4-6 minutes per side, until browned and the thickest piece reaches 165°F (74°C).
- 5Wash the board, knife, and your hands with soap and water before touching anything else. Add the spinach and cook for 1-2 minutes, until wilted. Stir in the rice, black olives, and lemon juice, then taste and adjust the seasoning.
- 6Warm the whole-wheat tortilla in the skillet for 20-30 seconds, fill it with the chicken and rice mixture, and roll it closed.
