- uncooked white rice1 1/3 cup
- fresh spinach4 cup
- olive oil4 tbsp
- garlic4 clove
- lemon1
- salt1 tsp
- black pepper1/2 tsp
Instructions
- 1Start rice so it finishes around the same time as the chicken; rinse the rice, combine with water in a pot, bring to a simmer, then cover and cook until tender.
- 2Pat chicken dry and season with salt and pepper; heat oil in a skillet over medium-high heat and sear chicken until golden and cooked through, turning once.
- 3Remove chicken from the pan; lower heat, add a little more oil if needed and sauté minced garlic briefly until fragrant, add lemon juice and a splash of water, scrape up browned bits to make a quick sauce.
- 4Return chicken to the pan briefly to coat in sauce; while chicken rests for a minute, in a separate skillet wilt spinach with a small drizzle of oil and a pinch of salt until just tender.
- 5Serve chicken over rice with sautéed spinach on the side and spoon pan sauce over the top.
