Instructions

  1. 1Heat the oven to 425F. Halve the potatoes, cut the broccoli into florets, halve the lemon, and mince the garlic. Toss the potatoes with half the olive oil, half the salt, and half the pepper on a sheet pan. Roast for 20-25 minutes, until beginning to brown and fork-tender.
  2. 2Pat the salmon dry; do not rinse it. Season both sides with the remaining salt, remaining pepper, and Italian seasoning. Wash the board, knife, and hands with soap and water before touching anything else.
  3. 3Add the broccoli and salmon to the sheet pan. Toss the broccoli with the remaining olive oil and garlic, then roast for 10-14 minutes, until the broccoli is crisp-tender and the salmon flakes easily and reads 145°F (63°C) at the thickest part on an instant-read thermometer.
  4. 4Squeeze the lemon over the salmon, broccoli, and potatoes. Taste the vegetables and adjust with salt, pepper, or more lemon; serve hot.
