- broccoli florets6 cup
- yellow onion1/2
- garlic4 clove
- lemon1
- olive oil4 tbsp
- dried oregano2 tsp
- salt1 tsp
- black pepper1/2 tsp
Instructions
- 1Heat the oven and line a large sheet pan for easy cleanup.
- 2Halve the potatoes and toss them with part of the olive oil, oregano, salt, and pepper.
- 3Roast the potatoes until they are beginning to brown.
- 4Add the broccoli, onion, and garlic to the pan, toss with the remaining oil, and make space for the salmon.
- 5Place the salmon on the pan and season it with lemon juice, oregano, salt, and pepper.
- 6Roast until the salmon flakes easily and the vegetables are tender.
- 7Serve the salmon with the roasted potatoes and broccoli, spooning the pan juices over the top.
