- canned tuna in water (drained)2 can
- canned chickpeas (rinsed)2 can
- whole-wheat pita4
- cucumber (diced)2
- baby spinach4 oz
- yellow onion, diced1/4 lb
- lemon1
- black pepper1/2 tsp
- salt & pepper1/2 tsp
Instructions
- 1Drain and rinse the chickpeas, then pat them dry if they are very wet.
- 2Combine the tuna, chickpeas, cucumber, onion, and spinach in a bowl.
- 3Squeeze lemon juice over the mixture and season with salt and pepper. Toss gently so the tuna stays in chunks.
- 4Warm the pita briefly in a dry skillet or toaster, if desired.
- 5Serve the tuna-chickpea mixture with the pita for scooping or stuff it into the pita.
