- lean ground turkey16 oz
- canned chickpeas, drained2 can
- uncooked white rice1 cup
- canned diced tomatoes2 can
- onion, diced1/2 cup
- garlic clove4 clove
- plain Greek yogurt8 tbsp
- dried basil1 tsp
- salt & pepper1/2 tsp
- olive oil4 tsp
Instructions
- 1Rinse the rice, combine it with water in a saucepan, and simmer until tender. Let it stand briefly, then fluff with a fork.
- 2Warm the oil in a large skillet over medium heat. Cook the onion until softened, then add the garlic.
- 3Add the ground turkey and cook, breaking it apart, until no pink remains.
- 4Stir in the chickpeas, diced tomatoes, basil, salt, and pepper. Simmer until thickened and heated through.
- 5Serve the turkey mixture over the rice and finish with a spoonful of Greek yogurt.
