- black beans, drained2 cup
- corn kernels1 cup
- avocado2
- chunky salsa1 cup
- canola oil4 tsp
Instructions
- 1Warm the tortillas in a dry skillet, then cut them into strips.
- 2Heat the oil and cook the tortilla strips until lightly crisp.
- 3Add the beans, corn, and salsa and warm everything through.
- 4Make two spaces in the mixture, crack in the eggs, and cook until the whites are set.
- 5Scatter cheese over the skillet and serve with sliced avocado.
