- tilapia filletpatted dry20 oz
- couscous1 1/4 cup
- frozen spinach4 oz
- red onionthinly sliced1/4 lb
- garlicminced2 clove
- cooking oil4 tsp
- balsamic vinegar4 tsp
- kosher salt1 tsp
- black pepper1/2 tsp
Instructions
- 1Thinly slice the red onion and mince the garlic. Pat the tilapia dry; do not rinse it. Season both sides with the kosher salt and black pepper.
- 2Put the couscous, frozen spinach, garlic, onion, and cooking oil in a microwave-safe bowl. Add enough water to cover the couscous according to the package directions, cover loosely, and microwave for 3-4 minutes, until the couscous is tender and the spinach is hot.
- 3Place the seasoned tilapia on top of the couscous mixture. Cover loosely and microwave for 3-4 minutes, turning once if the fillet is thick, until the fish flakes easily and the thickest part reads 145°F (63°C) on an instant-read thermometer.
- 4Let the dish stand for 1-2 minutes. Drizzle with balsamic vinegar, fluff the couscous, and taste for seasoning; the fish should be opaque and tender.
