- white beansdrained and rinsed2 can
- tomato sauce1 1/4 can
- frozen spinach6 oz
- red onionfinely diced1/4 lb
- garlicminced2 clove
- grated parmesan1 oz
- cooking oil4 tsp
- kosher salt1 tsp
- black pepper1/2 tsp
Instructions
- 1Finely dice the red onion and mince the garlic. Put the pasta in a large microwave-safe bowl and add enough water to cover it generously. Microwave uncovered according to the package timing, stirring every 3-4 minutes, until al dente; start tasting 2 minutes before the package time.
- 2Drain the pasta carefully. Stir in the onion, garlic, cooking oil, kosher salt, and black pepper. Microwave uncovered for 1-2 minutes, until the onion is softened and the garlic is fragrant.
- 3Stir in the white beans, tomato sauce, and frozen spinach. Microwave uncovered for 3-4 minutes, stirring halfway, until the sauce is bubbling at the edges and the spinach is hot throughout.
- 4Stir in the Parmesan and let stand for 1-2 minutes. Taste and adjust the seasoning; the sauce should coat the pasta and the beans should be hot throughout.
