- chicken breastpatted dry20 oz
- hominydrained and rinsed16 oz
- fresh spinachroughly chopped4 oz
- yellow oniondiced1/2
- garlic cloveminced2 clove
- smoked paprika2 tsp
- low-sodium chicken broth2 cup
- lemon juice4 tbsp
- olive oil4 tsp
- kosher salt1 tsp
- black pepper1/4 tsp
Instructions
- 1Dice the onion, mince the garlic, and roughly chop the fresh spinach. Drain and rinse the hominy. Do not rinse the chicken breast. Wash the board, knife, and your hands with soap and water before touching anything else.
- 2Pat the chicken dry and season it with kosher salt, black pepper, and smoked paprika.
- 3Heat the olive oil in a skillet over medium-high heat. Sear the chicken 4-5 minutes per side, until golden and the thickest part reaches 165°F (74°C). Move it to a clean plate.
- 4Add the onion and garlic, season with a pinch of salt, and cook 2-3 minutes, until softened and fragrant. Add the hominy and toast 2 minutes.
- 5Pour in the broth, return the chicken to the skillet, cover, and simmer 8-10 minutes, until the sauce is reduced and the chicken remains at 165°F (74°C).
- 6Stir in the spinach and lemon juice and cook 1-2 minutes, until wilted. Taste and adjust seasoning before serving.
