Instructions
- 1Preheat the oven to 425F. Thinly slice the onion and mince the garlic. Pat the chicken thighs dry without rinsing them, then season both sides with the paprika, kosher salt, and black pepper.
- 2Arrange the chicken thighs, onion, and garlic in a baking dish and drizzle with the olive oil. Roast for 18-22 minutes, until the chicken is browned and the thickest part reads 165°F (74°C) on an instant-read thermometer.
- 3Wash the board, knife, and your hands with soap and water before touching anything else. Add the broccoli florets around the chicken and roast for 8-10 minutes more, until the broccoli is bright green and tender-crisp and the chicken remains at 165°F (74°C).
- 4Taste the broccoli and pan juices, then adjust with kosher salt and black pepper before serving. The vegetables should be fragrant and the chicken should release easily from the dish.
