Instructions

  1. 1Thinly slice the pork, dice the onion, and mince the garlic. Pat the pork dry without rinsing it, season it with salt and pepper, and wash the board, knife, and hands with soap and water before touching anything else.
  2. 2Heat the oil in a large skillet over medium-high heat. Cook the pork for 4-6 minutes, stirring occasionally, until browned and the thickest pieces reach 145°F (63°C). Transfer it to a plate and let it rest at least 3 minutes.
  3. 3Add the onion and garlic to the skillet, season with a pinch of salt, and cook for 3-4 minutes until translucent and fragrant.
  4. 4Add the beans, hominy, tomatoes, cumin, and pepper. Simmer for 5-7 minutes, stirring, until bubbling and slightly thickened. Return the pork and its juices, heat for 1-2 minutes until hot, taste, and adjust the seasoning.
