- boneless pork loincut into thin strips24 oz
- sweet potatoespeeled and cut into small cubes24 oz
- broccoli florets12 oz
- onionthinly sliced1/2
- balsamic vinegar4 tbsp
- maple syrup4 tsp
- cooking oil6 tsp
- kosher salt1 tsp
- black pepper1/2 tsp
Instructions
- 1Peel and cut the sweet potatoes into small cubes and thinly slice the onion. Cut the broccoli florets into bite-size pieces if needed. Pat the pork dry; do not rinse it. Season it with salt and pepper. Wash the board, knife, and hands with soap and water before touching anything else.
- 2Warm the oil in a large skillet over medium heat. Add the sweet potatoes, onion, and a pinch of salt. Cover and cook for 10-12 minutes, stirring occasionally, until the sweet potatoes are nearly fork-tender and the onion is softened.
- 3Add the broccoli and cook covered for 5-7 minutes, until crisp-tender and bright green. Transfer the vegetables to a plate.
- 4Add the pork to the skillet and cook for 4-6 minutes, stirring, until browned and the thickest pieces read 145°F (63°C). Return the vegetables to the skillet, then rest at least 3 minutes before slicing.
- 5Stir in the balsamic vinegar and maple syrup. Cook for 1-2 minutes, until the glaze is reduced and coats the pork and vegetables. Taste and adjust with salt and pepper. Let the pork rest for at least 3 minutes before serving.
