- pork tenderloinpatted dry24 oz
- yukon gold potatoquartered20 oz
- broccolicut into florets12 oz
- butter:2 tbsp
- dried oregano:1 tsp
- kosher salt:1 1/4 tsp
- black pepper:1/2 tsp
Instructions
- 1Heat the oven to 425F. Quarter the potatoes and cut the broccoli into florets.
- 2Pat the pork dry and season it with salt, pepper, and oregano. Sear it in an oven-safe skillet until browned, about 3-4 minutes per side. Wash the board, knife, and hands with soap and water before touching anything else.
- 3Add the potatoes and butter, then roast until the pork reaches 145°F (63°C) and the potatoes are fork-tender, about 18-22 minutes, then rest at least 3 minutes before slicing.
- 4Transfer the pork to a board and rest it for at least 3 minutes before slicing. Add the broccoli for the final 8-10 minutes, until crisp-tender. Taste and adjust seasoning.
