  • salmonpatted dry24 oz
  • russet potatocut into 1-inch pieces32 oz
  • frozen green peas8 oz
  • spinach4 oz
  • lemonjuiced2
  • garlicminced2
  • olive oil6 tbsp
  • smoked paprika2 tsp
  • kosher salt1 tsp
  • black pepper1/2 tsp

Instructions

  1. 1Cut the potatoes into 1-inch pieces, mince the garlic, and juice the lemon.
  2. 2Toss the potatoes with half the olive oil, smoked paprika, salt, and pepper. Spread them on a baking sheet and roast at 425F for 20-25 minutes, turning once, until golden brown and fork-tender.
  3. 3Pat the salmon dry, season both sides with salt and pepper, and place it skin-side down beside the potatoes. Roast for 10-14 minutes, until the thickest part flakes easily and reads 145°F (63°C).
  4. 4While the salmon cooks, warm the remaining olive oil in a skillet over medium heat. Add the garlic and cook for 30-60 seconds, until fragrant.
  5. 5Add the peas and spinach with a pinch of salt. Cook for 2-3 minutes, until the peas are hot and the spinach is wilted. Stir in the lemon juice and taste for seasoning.
  6. 6Serve the salmon with the potatoes and peas, spooning any skillet juices over the top.
