Instructions

  2. 2Roast until the potatoes begin to soften.
  3. 3Add the pork and mushrooms, then roast until the pork reaches 145°F (63°C) internally and the potatoes are tender, then rest at least 3 minutes before slicing.
  4. 4Stir the spinach into the hot vegetables, top with mozzarella, and return the dish to the oven until the cheese melts.
