- boneless pork loin20 oz
- russet potato1 5/8 lb
- mushroom, sliced8 oz
- frozen spinach8 oz
- mozzarella4 oz
- yellow onion, sliced1/2 cup
- dried rosemary1/2 tsp
- butter4 tsp
- Black pepper1/2 tsp
Instructions
- 1Heat the oven to 425°F and place the potatoes and onion in a baking dish with the butter, rosemary, and black pepper.
- 2Roast until the potatoes begin to soften.
- 3Add the pork and mushrooms, then roast until the pork reaches 145°F (63°C) internally and the potatoes are tender, then rest at least 3 minutes before slicing.
- 4Stir the spinach into the hot vegetables, top with mozzarella, and return the dish to the oven until the cheese melts.
