- pork tenderloin1 1/4 lb
- Yukon gold potato1 5/8 lb
- green cabbage1 lb
- yellow onion, sliced1/3 lb
- dried rosemary1/8 oz
- garlic clove2
- olive oil4 tsp
- low-sodium chicken broth1 cup
Instructions
- 1Heat the oven and line a baking sheet or roasting pan with foil. Cut the potatoes into bite-size pieces and toss them with half the oil, rosemary, garlic, and a little salt and pepper.
- 2Roast the potatoes until they begin to brown and soften. Pat the pork dry, season it, and place it with the potatoes.
- 3Roast until the pork reaches 145°F in the center. Transfer the pork to a cutting board and let it rest.
- 4While the pork rests, warm the remaining oil in a large skillet. Cook the onion until softened, then add the cabbage and broth. Cover and cook until the cabbage is tender, stirring occasionally.
- 5Slice the rested pork and serve it with the roasted potatoes and cabbage.
