Instructions

  1. 1Thinly slice the turkey breast and mince the garlic. Do not rinse the turkey. Pat the turkey dry, then season it with the kosher salt, black pepper, and rosemary.
  2. 2Bring a pot of water to a boil, salt the water well, and cook the whole wheat spaghetti until al dente, starting to taste two minutes before the package time. Drain it, reserving a little cooking water.
  3. 3While the pasta cooks, heat the olive oil in a large skillet over medium-high heat. Add the turkey in a single layer and sear for 3-4 minutes per side, until browned and the thickest pieces read 165°F (74°C) on an instant-read thermometer. Transfer it to a clean plate, then wash the board, knife, and your hands with soap and water before touching anything else.
  4. 4Reduce the skillet to medium heat. Add the garlic and zucchini noodles with a small pinch of salt, tossing for 2-3 minutes until the garlic is fragrant and the zucchini is crisp-tender.
  5. 5Stir in the tomato sauce and a splash of reserved pasta water. Simmer for 3-4 minutes, until the sauce is hot and slightly reduced. Taste and adjust with kosher salt, black pepper, and a small splash of pasta water if needed.
  6. 6Toss in the spaghetti and turkey, then cook for 1-2 minutes until coated and steaming. Finish with the parmesan and serve.
