- cooked chicken breastshredded20 oz
- white hominydrained and rinsed2 can
- frozen spinach8 oz
- salsa verde12 oz
- oniondiced1/2 lb
- cumin1/2 tsp
- cooking oil4 tsp
- low-sodium chicken broth1 cup
- kosher salt1/2 tsp
- black pepper1/4 tsp
Instructions
- 1Dice the onion. Shred the chicken if it is not already shredded.
- 2Heat the cooking oil in a large skillet over medium heat. Add the onion, season with a pinch of the kosher salt, and cook for 4-5 minutes, until translucent and softened.
- 3Stir in the cumin and cook for 30-60 seconds, until fragrant. Add the salsa verde, chicken broth, hominy, and frozen spinach. Simmer for 5-7 minutes, stirring occasionally, until the spinach is tender and the sauce lightly coats the hominy.
- 4Stir in the shredded chicken and cook for 3-4 minutes, until heated through to 165°F (74°C). Taste and adjust with the remaining kosher salt and black pepper.
