- shredded cabbage2 oz
- salsa verde6 tbsp
- rice vinegar2 tsp
- butter2 tbsp
- kosher salt1 tsp
- black pepper1/2 tsp
Instructions
- 1Pat the tilapia dry. Do not rinse it. Season both sides with the kosher salt and black pepper.
- 2Melt the butter in an oven-safe skillet over medium heat. Add the tilapia and cook for 2-3 minutes per side, until lightly browned. Transfer the skillet to a 400F oven and bake for 8-12 minutes, until the fish flakes easily and reaches 145°F (63°C) in the thickest part.
- 3Remove the skillet from the oven. Wash the board, knife, and your hands with soap and water before touching anything else. Break the tilapia into large flakes.
- 4Toss the shredded cabbage with the rice vinegar and a pinch of the listed salt. Warm the tortillas in the oven for 1-2 minutes, until flexible and heated through.
- 5Fill the tortillas with cabbage and tilapia, then top with salsa verde. Taste and adjust with black pepper before serving.
