- quinoa1 1/3 cup
- egg4
- baby spinachchopped4 oz
- cherry tomatohalved8 oz
- lemon juice4 tsp
- olive oil4 tsp
- dried oregano1/2 tsp
- kosher salt1/2 tsp
- black pepper1/2 tsp
Instructions
- 1Chop the spinach and halve the tomatoes.
- 2Cook the quinoa in water according to the package directions, seasoning the cooking water well. When the quinoa is tender and its germ has unfurled, fluff it and set it aside.
- 3Heat the olive oil in a skillet over medium heat. Add the tomatoes, oregano, and a pinch of salt; cook 2-3 minutes, until softened.
- 4Add the spinach and cook 1-2 minutes, until wilted. Push the vegetables aside, crack in the egg, season it with salt and black pepper, and cook 3-4 minutes, stirring, until set and the center reaches 160F (71C).
- 5Fold in the quinoa and lemon juice. Warm 1-2 minutes, until steaming and fragrant. Taste and adjust the seasoning.
