Instructions

  1. 1Cut the potato into small cubes and slice the pepper and onion. Heat the olive oil in a large skillet and cook the potato until browned and almost tender.
  2. 2Season the pork with paprika, oregano, minced garlic, salt, and pepper if available. Add it to the skillet and cook until browned and fully cooked.
  3. 3Stir in the pepper and onion and cook until softened while the pork finishes cooking.
  4. 4Add the frozen spinach and cook until hot and any excess moisture has evaporated.
  5. 5Squeeze lime over the skillet before serving.
