  • pork tenderloinpatted dry2 lb
  • cabbagethinly sliced2 lb
  • applecored and chopped2
  • onionthinly sliced1/2 lb
  • garlicminced2 clove
  • apple cider vinegar4 tbsp
  • smoked paprika2 tsp
  • cooking oil2 tsp
  • kosher salt1 tsp
  • black pepper1/2 tsp

Instructions

  1. 1Thinly slice the cabbage and onion, core and chop the apple, and mince the garlic.
  2. 2Do not rinse the pork. Pat it dry, then season all sides with the kosher salt, black pepper, and smoked paprika. Place it on a clean plate. Wash the board, knife, and hands with soap and water before touching anything else.
  3. 3Warm the cooking oil in a large skillet over medium-high heat. Sear the pork for 2-3 minutes per side, until deeply golden and it releases from the pan on its own. Transfer it to the slow cooker. If you skip searing, place the seasoned pork directly in the slow cooker.
  4. 4Add the cabbage, onion, apple, and garlic around the pork. Drizzle in the apple cider vinegar and add enough water to barely cover the bottom of the cooker. Cover and cook on low for 4-5 hours, until the cabbage is tender and the thickest part of the pork reads 145°F (63°C) on an instant-read thermometer, then rest at least 3 minutes before slicing.
  5. 5Transfer the pork to a cutting board and let it rest for at least 3 minutes before slicing. Taste the cabbage and cooking juices, then adjust with salt and black pepper. Serve the sliced pork over the cabbage mixture.
