Instructions

  1. 1Thinly slice the bell pepper and yellow onion, and mince the garlic. Do not rinse the pork. Pat it dry, then season all over with kosher salt, black pepper, chili powder, and ground cumin.
  2. 2Place the pork, bell pepper, onion, garlic, and chicken broth in the slow cooker. Cover and cook on low for 5-6 hours, until the pork is fork-tender and the thickest part reads 145°F (63°C) on an instant-read thermometer. Wash the board, knife, and your hands with soap and water before touching anything else, then rest at least 3 minutes before slicing.
  3. 3Shred the pork in the slow cooker and let it sit in the cooking juices for 5-10 minutes, until the juices lightly coat the meat.
  4. 4Heat the cauliflower rice in a covered microwave-safe dish for 4-6 minutes, stirring halfway, until steaming and tender. Season with a pinch of salt and serve with the pork, peppers, onions, and lime.
