- smoked paprika:null1 tsp
- olive oil:null2 tbsp
- kosher salt:null1 tsp
- black pepper:null1/2 tsp
Instructions
- 1Pat the chicken breast dry without rinsing it. Season both sides with kosher salt, black pepper, and smoked paprika. Wash the board, knife, and your hands with soap and water before touching anything else.
- 2Heat the olive oil in a large skillet over medium heat. Add the chicken and sear for 4-5 minutes per side, until deeply golden and the thickest part reads 165°F (74°C) on an instant-read thermometer.
- 3Transfer the chicken to a clean plate. Add the minced garlic to the skillet and cook for 30-60 seconds, until fragrant and lightly golden.
- 4Stir the rice into the skillet with water according to the package directions. Bring to a simmer, cover, and cook according to the package directions until the rice is tender and the liquid is absorbed, testing a grain for a tender texture with no hard center.
- 5Stir in the frozen green peas and cook for 3-4 minutes, until hot and bright green. Taste and adjust with kosher salt, black pepper, and lemon juice until savory and lightly acidic.
- 6Slice the chicken and serve over the lemon rice and peas, spooning any skillet juices over the top.
