- uncooked white rice1 1/3 cup
- pinto beans2 can
- canned diced tomatoes (no-salt-added)2 can
- green cabbage16 oz
- bell pepper (any color), diced2
- yellow onion, sliced8 oz
- garlic (minced)1/2
- olive oil8 tsp
- chili powder2 tsp
- dried oregano1 tsp
- paprika1 tsp
- salt & pepper1 tsp
Instructions
- 1Cook the rice according to the package directions using water, then keep it covered while preparing the rest of the meal.
- 2Pat the pork dry and season it with paprika, chili powder, salt, and pepper. Sear it in olive oil in an oven-safe skillet until browned on all sides.
- 3Transfer the skillet to a preheated 400°F oven and roast the pork until it reaches 145°F in the center. Let it rest before slicing.
- 4While the pork rests, sauté the onion, bell pepper, and garlic in the same skillet until softened.
- 5Stir in the cabbage, pinto beans, diced tomatoes, and oregano. Simmer until the cabbage is tender and the mixture is hot.
- 6Serve the sliced pork over rice with the tomato-bean cabbage topping.
