Smoky Tomato Pork with Potato and Cabbage

- zucchinidiced12 oz

- smoked paprika2 tsp
- cooking oil4 tsp
- kosher salt1/2 tsp
- black pepper1/4 tsp
Instructions
- 1Dice the potato, zucchini, and onion, and thinly slice the cabbage. Pat the pork dry without rinsing it, then season it with salt, pepper, and smoked paprika. Wash the board, knife, and your hands with soap and water before touching anything else.
- 2Heat half the oil in a covered skillet over medium heat. Add the potato and onion, season lightly with salt, cover, and cook for 10-12 minutes, stirring occasionally, until the potato is fork-tender and golden in spots.
- 3Push the vegetables aside. Add the remaining oil and sear the pork for 4-5 minutes per side until browned. Pour in the tomato sauce, cover, and simmer for 8-10 minutes until the thickest part reads 145°F (63°C) on an instant-read thermometer, then rest at least 3 minutes before slicing.
- 4Transfer the pork to a clean plate and let it rest for at least 3 minutes before slicing. Add the zucchini and cabbage to the skillet and cook for 4-5 minutes until crisp-tender and the sauce coats the vegetables.
- 5Taste the vegetables and adjust with salt and pepper. Slice the pork and serve it over the skillet vegetables.
