Instructions
- 1Dice the potato, pepper, and onion into small pieces.
- 2Heat the oil in a skillet and cook the potato until nearly tender.
- 3Add the pepper, onion, chili powder, and black beans, then cook until the vegetables soften and the beans are hot.
- 4Make two spaces in the hash and crack in the eggs. Cover and cook until the whites are set and the yolks reach your preferred doneness.
- 5Serve with avocado and salsa.
