Instructions

  1. 1Cook the brown rice according to the package directions until tender.
  2. 2Warm the olive oil in a large skillet and cook the diced onion until softened.
  3. 3Add the ground turkey, garlic, chili powder, cumin, salt, and pepper. Cook, breaking it into small pieces, until the thickest part reads 165°F (74°C) on an instant-read thermometer.
  4. 4Stir in the black beans, corn, and diced tomatoes. Simmer until hot and slightly thickened.
  5. 5Toss the shredded cabbage with lime juice and a pinch of salt.
