- Corn kernels2 cup
- Diced tomatoes2 can
- Green cabbage, shredded4 cup
- Yellow onion1
- Garlic4 clove
- Lime1
- Olive oil8 tsp
- Chili powder2 tsp
- Ground cumin1 tsp
- Salt1/2 tsp
- Black pepper1/2 tsp
Instructions
- 1Cook the brown rice according to the package directions until tender.
- 2Warm the olive oil in a large skillet and cook the diced onion until softened.
- 3Add the ground turkey, garlic, chili powder, cumin, salt, and pepper. Cook, breaking it into small pieces, until the thickest part reads 165°F (74°C) on an instant-read thermometer.
- 4Stir in the black beans, corn, and diced tomatoes. Simmer until hot and slightly thickened.
- 5Toss the shredded cabbage with lime juice and a pinch of salt.
- 6Serve the turkey and bean skillet over rice with the lime cabbage on top.
