- fresh spinachroughly chopped4 cup
- red onionfinely diced1/2 lb
- parmesan cheesegrated8 tbsp
- olive oil4 tsp
- kosher salt1/2 tsp
- black pepper1/2 tsp
Instructions
- 1Finely dice the onion and roughly chop the spinach.
- 2Cook the brown rice according to the package directions until tender.
- 3Whisk the eggs with salt, pepper, and parmesan. Stir in the rice.
- 4Warm the olive oil in a nonstick skillet over medium-low heat. Add the onion and a pinch of salt, cooking for 3-4 minutes until translucent and softened. Add the spinach and cook for 1-2 minutes until wilted.
- 5Pour in the egg mixture and cook covered for 6-8 minutes, until the edges are set and the center reaches 160F (71C) on an instant-read thermometer.
