- lean ground turkey20 oz
- long-grain white rice1 cup
- zucchinidiced16 oz
- diced tomatoes2 can
- frozen corn1 cup
- yellow oniondiced1/2
- taco seasoning2 tbsp
- canola oil4 tsp
- kosher salt1 tsp
- black pepper1/4 tsp
Instructions
- 1Dice the zucchini and onion.
- 2Heat the oil in a skillet over medium heat. Add the turkey, salt, and pepper and break it apart as it cooks for 6-8 minutes, until browned and the thickest pieces reach 165°F (74°C). Transfer it to a bowl, then wash the board, knife, and your hands with soap and water before touching anything else.
- 3Add the onion and zucchini to the skillet and cook for 4-5 minutes, until the onion is translucent and the zucchini is crisp-tender.
- 4Stir in the rice, taco seasoning, tomatoes, corn, and enough water to cook the rice according to its package directions. Cover and simmer for 15-20 minutes, until the rice is tender and the liquid is absorbed.
- 5Fold the turkey back in and simmer for 2-3 minutes, until steaming hot and the turkey reaches 165°F (74°C). Taste and adjust the seasoning.
