- frozen corn1 3/8 cup
- chicken broth1 cup
- olive oil4 tsp
- garlic4 clove
- chili powder4 tsp
- ground cumin2 tsp
- salt1/2 tsp
- black pepper1/2 tsp
Instructions
- 1Cook the rice according to its package directions and keep it warm.
- 2Heat the oil in a large pot. Brown the turkey, breaking it into small pieces as it cooks.
- 3Add the onion, bell pepper, and garlic, and cook until the vegetables begin to soften.
- 4Stir in the beans, tomatoes, corn, broth, chili powder, cumin, salt, and pepper.
- 5Simmer uncovered until the chili thickens and the vegetables are tender. Serve over the warm rice.
