Instructions

  1. 1Heat the oven to an appropriate temperature for baking tortillas until hot and lightly browned.
  2. 2Cook the onion, bell pepper, garlic, and ground turkey in a skillet until the vegetables are tender and the turkey is fully cooked.
  3. 3Stir in the black beans, corn, and spinach, cooking until the spinach is thawed and the filling is hot.
  4. 4Spread some enchilada sauce in a baking dish. Fill the tortillas with the turkey mixture, roll them up, and place them seam-side down in the dish.
