- lean ground turkey16 oz
- zucchinidiced12 oz
- cherry tomatohalved8 oz
- yellow oniondiced1/2
- feta cheesecrumbled2 oz
- whole wheat pita4
- olive oil4 tsp
- dried oregano1 tsp
- kosher salt1 tsp
- black pepper1/4 tsp
Instructions
- 1Dice the zucchini and onion and halve the cherry tomato.
- 2Season the ground turkey with kosher salt, black pepper, and dried oregano before it meets the heat.
- 3Heat the olive oil in a skillet over medium-high heat. Add the turkey and cook 5-7 minutes, breaking it into small pieces, until browned and the thickest pieces reach 165°F (74°C). Transfer it to a bowl, then wash the board, knife, and your hands with soap and water if they contacted raw turkey.
- 4Cook the onion and zucchini in the skillet with a pinch of salt for 3-4 minutes, until softened and lightly golden. Add the tomato and cook 2-3 minutes, until the tomato softens.
- 5Return the turkey to the skillet, fold in the feta cheese, and cook 1-2 minutes, until hot and the feta begins to soften. Warm the pita for 30-60 seconds per side and fill it with the mixture.
