- diced tomatoes2 can
- spinach4 cup
- oniondiced1
- garlicminced4 clove
- extra-virgin olive oil4 tsp
- Italian seasoning2 tsp
- kosher salt1 tsp
- black pepper1/2 tsp
Instructions
- 1Dice the onion and mince the garlic.
- 2Bring a pot of water to a boil, salt it well, and cook the pasta until al dente, tasting two minutes before the package time. Drain, reserving a small splash of pasta water.
- 3Pat the ground turkey dry if needed, season it with kosher salt and black pepper, and cook it in the oil in a skillet over medium heat for 6-8 minutes, breaking it apart, until browned and the thickest pieces read 165°F (74°C) on an instant-read thermometer. Transfer it to a plate, then wash the board, knife, and hands with soap and water before touching anything else.
- 4Cook the onion with a pinch of kosher salt for 3-4 minutes, until translucent. Add the garlic and Italian seasoning and cook for 30-60 seconds, until fragrant.
- 5Stir in the tomatoes and spinach and simmer for 4-5 minutes, until the spinach wilts and the sauce thickens slightly. Add the turkey and pasta, loosening with pasta water as needed, and simmer for 1-2 minutes until hot; taste and adjust with kosher salt and black pepper.
