- lean ground turkey20 oz
- zucchinidiced16 oz
- black beansdrained and rinsed12 oz
- diced tomatoes12 oz
- shredded cheddar3 oz
- taco seasoning1 oz
- canola oil4 tsp
- kosher salt1 tsp
- black pepper1/2 tsp
Instructions
- 1Dice the zucchini. Pat the ground turkey dry if needed, season it with salt and pepper, and wash the board, knife, and hands with soap and water before touching anything else.
- 2Heat the oil in a skillet over medium-high heat. Add the turkey and cook for 6-8 minutes, breaking it up, until browned and it reaches 165°F (74°C).
- 3Add the zucchini and taco seasoning, season the vegetables with a pinch of salt, and cook for 3-4 minutes until the zucchini is crisp-tender.
- 4Stir in the beans and tomatoes and simmer for 3-4 minutes until bubbling and thickened. Sprinkle with cheddar, cover, and cook for 1-2 minutes until melted. Taste and adjust the seasoning.
