Instructions

  1. 1Finely dice the onion and mince the garlic. Pat the fish dry, season both sides with kosher salt and black pepper, and set it aside. Wash the board, knife and your hands with soap and water before touching anything else.
  2. 2Bring a pot of water to a boil, salt it well, and cook the pasta until al dente, starting to taste 2 minutes before the package time. Drain it.
  3. 3Heat half the olive oil in a large skillet over medium-low heat. Add the onion with a pinch of kosher salt and cook for 3-4 minutes, until translucent and softened. Add the garlic and red pepper flakes; cook for 30-60 seconds, until fragrant.
  4. 4Stir in the tomato sauce and frozen spinach. Simmer for 5-7 minutes, stirring, until the spinach is hot and the sauce coats the spoon. Taste and adjust the salt and pepper.
  5. 5Push the sauce to one side of the skillet and add the remaining olive oil. Place in the fish and cook for 3-5 minutes per side, until opaque, flakes easily and the thickest part reads 145F (63C). Transfer the fish to a plate.
  6. 6Toss the pasta with the sauce, taste and adjust with salt and pepper, and serve with the fish.
