  • turkeyground24 oz
  • sweet potatocubed4
  • frozen green beans4 cup
  • rolled oats1 cup
  • egg2
  • onionfinely diced1/2
  • tomato paste4 tbsp
  • olive oil4 tsp
  • kosher salt1 1/2 tsp
  • black pepper1/2 tsp

Instructions

  1. Finely dice the onion and cube the sweet potato. Do not rinse the ground turkey. Season it with salt and pepper, then wash the board, knife, and hands with soap and water before touching anything else.
  2. Mix the turkey, oats, egg, onion, tomato paste, salt, and pepper. Shape into a compact loaf on a lightly oiled baking pan.
  3. Toss the sweet potato with the remaining oil and place it beside the loaf. Bake at 400F until the sweet potato is fork-tender and the loaf reaches 165F (74C), about 25-35 minutes.
  4. Microwave or steam the green beans until crisp-tender, about 3-5 minutes. Taste the vegetables and adjust the seasoning before serving.
