- brown rice1 cup
- green cabbage20 oz
- mushroom, sliced8 oz
- bell pepper, sliced2
- yellow onion, sliced1/2 cup
- balsamic vinegar4 tbsp
- honey4 tsp
- garlic clove2 clove
- brown sugar2 tsp
Instructions
- 1Rinse the brown rice and cook it according to the package directions until tender.
- 2Pat the pork loin dry and season it with salt and pepper if available. Sear it in a hot skillet until browned, then cook until the center reaches 145°F. Transfer it to a plate to rest.
- 3Add the onion, cabbage, mushrooms, bell pepper, and garlic to the skillet. Cook until the vegetables are tender and lightly browned.
- 4Stir the balsamic vinegar, honey, and brown sugar together, then pour the mixture into the skillet. Simmer briefly until slightly thickened.
- 5Slice the rested pork and serve it over the rice with the glazed vegetables.
