  • bell pepperthinly sliced2
  • yellow onionthinly sliced1/2
  • cheddar cheeseshredded6 oz
  • plain greek yogurt1 cup
  • limejuiced1
  • cooking oil4 tsp
  • chili powder2 tsp
  • ground cumin1 tsp
  • kosher salt1 tsp
  • black pepper1/2 tsp

Instructions

  1. Thinly slice the bell pepper and yellow onion. Cut the chicken breast into bite-size pieces.
  2. Do not rinse the chicken. Pat it dry, season it with half the chili powder, half the cumin, the kosher salt, and black pepper. Wash the cutting board, knife, and hands with soap and water before touching anything else.
  3. Heat the cooking oil in an oven-safe skillet over medium heat. Add the chicken and cook for 5-7 minutes, turning occasionally, until lightly browned and the thickest pieces reach 165°F (74°C). Transfer it to a plate.
  4. Add the bell pepper and yellow onion to the skillet, season with the remaining chili powder and cumin, and cook for 4-6 minutes, until softened and fragrant.
  5. Stir the plain greek yogurt with the lime juice. Tear the flour tortillas into large pieces.
  6. Layer half the tortillas, chicken, vegetables, yogurt mixture, and cheddar cheese in the skillet. Repeat the layers, finishing with cheese.
  7. Bake at 375F for 18-22 minutes, until the cheese is melted and bubbling and the center is hot. Let it stand for 5 minutes before serving.
