- brown rice, cooked12 oz

Instructions
- 1Heat the oil in a deep skillet or saucepan and brown the chicken with the garlic, until the thickest part reads 165°F (74°C) on an instant-read thermometer.
- 2Add the crushed tomatoes, broth, hominy, black beans, and diced tomato.
- 3Cover and simmer until the chicken is cooked through and the flavors are blended.
- 4Stir in the rice near the end to warm it, then season to taste with salt, pepper, and chili or cumin if available.
