- black beans, drained1 can
- canned diced tomatoes (no-salt-added)2 can
- frozen corn1 cup
- green cabbage1 lb
- yellow onion, diced1/3 lb
- garlic clove2 clove
- low-sodium chicken broth4 cup
- taco seasoning1 oz
- whole-wheat tortillas2
- fresh cilantro1/3
Instructions
- 1Cut the chicken into bite-size pieces. Warm a pot over medium heat and cook the chicken with the onion and garlic outside, until the thickest part reads 165°F (74°C) on an instant-read thermometer.
- 2Add the broth, tomatoes, beans, corn, cabbage, and taco seasoning. Bring to a simmer, then cook until the chicken is fully cooked and the cabbage is tender.
- 3Cut the tortilla into thin strips and toast them in a dry skillet until crisp.
- 4Taste and adjust with black pepper, then serve the soup topped with tortilla strips and cilantro.
