- boneless skinless chicken thighspatted dry20 oz
- long-grain white rice.1 cup
- black beansdrained and rinsed1 can
- frozen corn.1 cup
- oniondiced8 oz
- red bell pepperdiced2
- diced tomatoes.2 can
- tomato sauce.1 cup
- chicken broth.2 cup
- chili powder.2 tsp
- dried oregano.1 tsp
- kosher salt.1 tsp
- black pepper.1/2 tsp
- shredded cheddar cheese.4 oz
Instructions
- 1Dice the onion and red bell pepper. Keep the chicken on a separate cutting board.
- 2Do not rinse the chicken. Pat it dry, then season all sides with the kosher salt, black pepper, chili powder, and dried oregano.
- 3Heat a deep oven-safe skillet over medium-high heat. Add the chicken and cook for 4-5 minutes per side until browned; cook until the thickest part reads 165°F (74°C) on an instant-read thermometer. Transfer it to a clean plate. Wash the board, knife, and your hands with soap and water before touching anything else.
- 4Add the onion and bell pepper to the skillet and cook for 4-5 minutes, stirring occasionally, until softened and fragrant.
- 5Stir in the rice and cook for 1-2 minutes until lightly toasted. Add the diced tomatoes, tomato sauce, and chicken broth, season with a small pinch of kosher salt, and bring to a simmer.
- 6Cover and simmer for 16-18 minutes until the rice is tender and the liquid is absorbed. Stir in the black beans and frozen corn, cover, and cook for 3-4 minutes until the corn is hot and the mixture is steaming throughout.
- 7Nestle the chicken into the rice, top with the shredded cheddar cheese, and cover for 1-2 minutes until the cheese melts and the chicken is reheated to 165°F (74°C). Taste and adjust with kosher salt and black pepper before serving.
