- diced tomatoes2 can
- black beans2 can
- frozen corn2 cup
- corn tortillas8
- lime2
- chicken broth6 cup
- canola oil4 tsp
- ground cumin1 tsp
Instructions
- 1Dice the onion and carrot and mince the garlic.
- 2Heat the oil in a pot and cook the onion, carrot, and garlic until fragrant.
- 3Add the chicken, tomatoes, broth, cumin, beans, and corn. Bring to a simmer and cook until the chicken is fully cooked.
- 4Transfer the chicken to a plate, shred it with two forks, and return it to the soup.
- 5Slice the tortillas into strips and toast them in a dry skillet until crisp.
- 6Serve the soup topped with tortilla strips and lime juice.
