Instructions

  1. 1Pat the chicken breast dry without rinsing it, then season both sides with salt, pepper, and cumin.
  2. 2Heat the oil in a skillet over medium heat. Sear the chicken for 4-5 minutes per side, until browned and the thickest part reads 165°F (74°C). Transfer it to a clean plate, then wash the board, knife, and your hands with soap and water before touching anything else.
  3. 3Add the quinoa, tomatoes, salsa, beans, and enough water to cook the quinoa according to its package directions. Cover and simmer for 15-18 minutes, until the quinoa is tender and its grains show their spiraled germ.
  4. 4Stir in the spinach and cook for 1-2 minutes, until wilted. Slice the chicken and return it to the skillet; simmer for 2-3 minutes, until steaming hot and it reaches 165°F (74°C).
