- boneless skinless chicken breast1 lb
- bell pepper, sliced2
- yellow onion, sliced1
- cooked brown rice3 cup
- canned black beans, drained1 can
- avocado, sliced1
- olive oil4 tbsp
- plain Greek yogurt (2% fat) for topping1/2 cup
- fresh lime juice4 tbsp
- chopped cilantro4 tbsp
- salt & black pepper1 tsp
Instructions
- 1Season the chicken with salt and pepper, heat oil in a skillet over medium-high heat, and cook the chicken until browned and cooked through; remove and let rest.
- 2In the same skillet, add sliced bell pepper and onion and sauté until softened with a bit of char, seasoning with salt and pepper.
- 3Warm the cooked brown rice and black beans together in a small pan or microwave until heated through.
- 4Slice the rested chicken and assemble the bowl with rice and beans as the base, then top with sautéed peppers and onions and sliced avocado.
- 5Stir lime juice into the Greek yogurt with chopped cilantro and a pinch of salt, dollop or drizzle over the bowl, and serve.
