- quinoa1 cup
- bell pepperthinly sliced2
- onionthinly sliced1
- black beansdrained and rinsed1 can
- corn1 cup
- limejuiced1
- extra-virgin olive oil4 tsp
- chili powder2 tsp
- ground cumin1 tsp
- kosher salt1 tsp
- black pepper1/2 tsp
Instructions
- 1Rinse the quinoa and cook it on the stovetop according to the package directions until the grains are tender and their germ rings are visible; fluff and let it stand covered.
- 2Thinly slice the bell pepper and onion. Pat the chicken dry without rinsing it, then season both sides with the chili powder, cumin, kosher salt, and black pepper.
- 3Heat the oil in a skillet over medium-high heat. Add the chicken and sear for 5-7 minutes per side, until browned and the thickest part reads 165°F (74°C) on an instant-read thermometer. Transfer it to a plate, then wash the board, knife, and hands with soap and water before touching anything else.
- 4Cook the pepper and onion in the same skillet for 5-7 minutes, stirring, until softened and lightly browned. Add the corn and black beans and cook for 2-3 minutes, until hot.
- 5Slice the chicken and toss it with the quinoa and vegetables. Finish with lime juice, tasting and adjusting with kosher salt and black pepper.
