Instructions
- 1Thinly slice the chicken sausage, bell pepper, and onion. Crack the egg into a small bowl and season with half the kosher salt and black pepper.
- 2Heat the canola oil in a skillet over medium heat. Add the sausage and cook until browned and heated through, about 4-5 minutes; check that the thickest piece reads 165F (74C) on an instant-read thermometer.
- 3Add the onion, bell pepper, remaining salt, and smoked paprika. Cook until the vegetables are tender and lightly browned, about 4-5 minutes.
- 4Stir in the cooked white rice and warm until steaming, about 2-3 minutes; taste and adjust the seasoning.
- 5Make a space in the skillet and add the egg. Scramble until set and the thickest portion reads 160F (71C) on an instant-read thermometer, about 2-3 minutes, then fold it through the rice.
