Instructions
- 1Thinly slice the onion and jalapeño and chop the tomatillos. Do not rinse the chicken. Wash the board, knife, and hands with soap and water before touching anything else.
- 2Pat the chicken thighs dry and season both sides with salt, pepper, and cumin. Warm the canola oil in a skillet over medium heat and sear 4-5 minutes per side, until deeply golden and the chicken releases from the pan. - 3Add the onion, jalapeño, and tomatillos around the chicken. Cook 3-4 minutes, until the onion softens and the tomatillos begin to break down.
- 4Add a splash of water, cover, and simmer 10-14 minutes, until the thickest part of the chicken reaches 165°F (74°C). Transfer the chicken to a clean plate and slice after resting briefly.
- 5Stir the spinach into the pan sauce and cook 1-2 minutes, until wilted. Taste and adjust the sauce with salt and pepper.
- 6Warm the tortillas in the skillet until flexible. Fill with sliced chicken, spinach, tomatillo sauce, and cheddar.
