- boneless chicken breastpatted dry and diced20 oz
- long-grain brown rice/1 cup
- canned black beansdrained and rinsed2 can
- corn/2
- tomatodiced2
- shredded mexican cheese/4 oz
- canned chipotle peppers in adobominced1 tbsp
- cooking oil/4 tsp
- kosher salt/1 tsp
- black pepper/1/2 tsp
Instructions
- 1Rinse the rice and cook it on the stovetop according to the package directions until tender and the grains are distinct.
- 2Do not rinse the chicken. Pat it dry, then season it with salt and pepper. Wash the board, knife, and hands with soap and water before touching anything else.
- 3Heat the oil in a skillet over medium-high heat. Add the chicken and cook for 5-7 minutes, stirring occasionally, until browned and the thickest pieces reach 165°F (74°C) on an instant-read thermometer.
- 4Add the black beans, corn, tomato, and chipotle. Cook for 3-4 minutes, stirring, until the vegetables are hot and the tomato softens.
- 5Taste the filling and adjust salt and pepper. Spoon it over the rice, top with cheese, and serve when the cheese is lightly softened.
