  • cooking oil/4 tsp
  • kosher salt/1 tsp
  • black pepper/1/2 tsp

Instructions

  1. 1Rinse the rice and cook it on the stovetop according to the package directions until tender and the grains are distinct.
  2. 2Do not rinse the chicken. Pat it dry, then season it with salt and pepper. Wash the board, knife, and hands with soap and water before touching anything else.
  3. 3Heat the oil in a skillet over medium-high heat. Add the chicken and cook for 5-7 minutes, stirring occasionally, until browned and the thickest pieces reach 165°F (74°C) on an instant-read thermometer.
  4. 4Add the black beans, corn, tomato, and chipotle. Cook for 3-4 minutes, stirring, until the vegetables are hot and the tomato softens.
  5. 5Taste the filling and adjust salt and pepper. Spoon it over the rice, top with cheese, and serve when the cheese is lightly softened.
